Los Angeles’ Jinya Ramen Bar produces a 10-hour simmered broth—complete with pork, chicken or beef bones added to the simmering recipe—with all the trappings of a decadent ramen bowl. This was one of the first spots to spark the ramen hype in L.A. and has remained a touchstone of authentic, well-made slurps. The noodles are handmade in-house with specialty spinach-infused noodles available on request.
